Chimi Pasta

  • 250 – 300 grams of pasta of choice
  • 2 tsp salt

  • 1/2 cup pasta cooking water

  • Parmesan and basil for serving

  • 2-3 tbl spoons Chimi hot


  1. BOIL 1 large pot of water with the salt.
  2. ADD pasta and cook for the length of time per the packet.
  3. SCOOP out 1 cup of of the pasta cooking water and set aside.
  4. DRAIN pasta in a colander, leave it for a minute.
  5. TRANSFER the pasta to a bowl. (Don’t leave in hot pot)
  6. ADD chimichurri and 1/4 cup of pasta water and mix through pasta.
  7. TASTE and add more salt and pepper if desired.
  8. GARNISH with fresh parmesan and basil.
  9. SERVE immediately.
